Mexican cuisine has an antiquity of including fresh herbs, vegetables and fruits with local nutriment. As centuries passed, Mexican food was impacted by the traditions of other nations. Slight changes in methods and ingredients have evolved over the path of history, but the powerful heritage of Mexican cooking has demonstrated resiliency, welcoming diverse influences, while holding tightly onto unmistakable traditional traits and traditions.
David Mota began his culinary journey on Gasparilla Island at the Boca Grande Farmers Market in 2015, selling his now iconic fresh guacamole, pico de gallo, and shrimp ceviche. After many successful seasons, the opportunity to utilize the courtyard of the historic Pink Pony and expand his business, was a simple choice. Mota introduced the Island favorite "Taco Tuesday", selling an assortment of rustic street style tacos, tamales and other crowd favorites. After yet another successful season at the Farmers Market and the Pink Pony Courtyard, another opportunity was offered to Mota. The Pink Pony invited David Mota to take over the kitchen and provide Island residents, visitors, and workers the opportunity to experience the true excitement and joy of tradition and Mexican Heritage.
